Zucchini spread that you’ll eat down to the last spoonful! I cook it all summer and can’t get enough of it.

  • 2 processed cheese triangles/wedges

  • 2 cloves of garlic

  • Green onions to taste

  • Fresh dill to taste

  • Vegetable oil

  • Teaspoons of salt

  • Ground black pepper to taste

Instructions

1. Prepare the Vegetables

  • Wash the zucchini and coarsely grate them. If your zucchini are larger, with tougher skin and large seeds, peel them and remove the seeds first.

  • Finely chop the onion and finely grate the carrot.

2. Sauté the Onion and Carrot

  • Heat a little vegetable oil in a frying pan. Add the chopped onion and sauté for a few minutes until golden brown.

  • Then add the grated carrot and briefly fry everything together.

3. Mix in the Zucchini

  • Add the grated zucchini to the pan. Season with salt and pepper to taste.

  • Stirring occasionally, sauté the vegetables until the zucchini softens and most of the excess liquid evaporates. This step is important—too much watery zucchini can unnecessarily thin out the spread.

4. Spices and Cheese

  • Once the vegetables soften, add the minced garlic cloves and heat everything through briefly. The garlic doesn’t need to be cooked for long in order to retain its pleasant aroma.

  • Then add the two processed cheeses, stir until completely melted, and combine with the vegetables.

  • Remove from the pan and let cool slightly.

5. Prepare the Spread

  • In a large bowl, mix the onions and garlic.

  • Add ground black pepper or a little salt to taste.

  • If you want the spread to be smooth, you can blend it slightly with an immersion blender. If you prefer a spread with vegetable pieces, leave it as it is.

How to Serve It

  • Zucchini spread is most delicious served on fresh bread or crispy rolls. It also goes great with toasted croutons, which nicely combine warm pastry with a soft and creamy filling.

  • On top, you can add a little fresh dill, green onions, or a few thin slices of radishes.

  • If you are preparing it as a party treat, you can serve it in a salad bowl, along with slices of fresh vegetables and toasted bread.

Tips for Extra Flavor

  • Evaporate the moisture: The main thing is that the zucchini sweats and reduces well during sautéing. Thanks to this, the resulting spread will turn out thick and nicely creamy. If the zucchini releases a lot of water, just sauté it a little longer.

  • Add garlic near the end: This helps it retain a more pronounced flavor and gives the spread that exact kick that pairs so well with zucchini and cheese.

  • Let it rest: Allow the finished spread to cool slightly before serving. After resting, the flavors blend even better, and the spread tastes even more delicious.
